Comparatively cheap and easy to both make and eat, it’s easy to see the appeal of a good sandwich. But if your daily tuna and sweetcorn sarnie is leaving you uninspired why not try this viral TikTok Italian chopped sandwich. Like the similar ‘grinder’ sandwich, a selection of salad, cheese and ham are laid on a board and chopped together with a large knife until minced before being dressed and stuffed into bread.
The trending Italian version features salami and / or mortadella (cured pork sausage from Bologna) and a full flavoured provolone cheese. I always keep an eye out for the fabulous half-moon blocks of piccante (strong) and dolce (sweet) provolone which appear periodically in my local Lidl, otherwise I pick it up from my local Italian deli. It can also be selected pre-sliced in both picante and smoked styles from Ocado.
Prep time: 15 minutes
Serves: 2
Ingredients
1 heart of romaine lettuce, roughly shredded
½ red onion, sliced
1 - 2 tomatoes, sliced
2 tbsp pitted green olives or 1 tbsp pickled chillies
2 slices mortadella or 6 slices salami
4 slices provolone piccante
1 tbsp mayonnaise
1 tbsp olive oil
1 tsp balsamic or other vinegar
Large pinch dried oregano
2 half ciabatta or mini baguettes
Method
Place the lettuce, red onion, tomatoes and olives in a pile on a chopped board. Lay the meat and cheese on top.
Using a large knife, chop together until roughly chopped. Spoon over the mayonnaise then drizzle with olive oil, vinegar, oregano and some salt and pepper and continue to chop until finely minced.
Cut the bread open and stuff in the filling. Wrap and pack.
