I made this as pudding for Sunday lunch today in my Instant Pot, turning it on as we sat down to our spaghetti starter and it was perfect by the time we were ready to eat it. I'm sure it'd work fine in a saucepan cooked low and slow. Maybe it could have been a little sweeter but it depends on what fruit you serve with it, I went for sweet mango and sharper passionfruit - a fabulous combo
Serves 4
250g glutinous rice, soaked overnight in cold water
400ml can coconut milk
50g sugar
pinch of salt
passion fruit, chopped mango, splash of coconut cream, to serve
Cook together gently until very tender, serve with a splash of of coconut cream and your choice of fruit
